Culinary Medicine

Culinary Medicine: Nutrition is a vital part of lifestyle medicine, which not only prevents diseases, but is an integral part of the treatment, management of many chronic diseases. The Culinary Medicine program – in Summer Medical School, aims to offer an evidence-based pedagogical approach, which combines knowledge of biochemistry and metabolism with nutrition. Through hands-on learning and carried out in the NMS Kitchen Lab, the participants are trained to carry out concrete nutritional and dietary recommendations and suitable for different chronic diseases, a proven strategy to improve nutrition, with the use of tools and techniques based on evidence for providing individualized education. This course prepares its participants to leave the hypothetical, and have an approach centered on person and their needs: "What can I eat to improve my health? What about my illness?” This course constitutes a key tool in the face of challenges imposed by society and which aims to follow the evolution of medicine, taking into account the concept of 4P’s medicine - Predictive, Preventive, Personalized and Participative. This program will include a research aspect, allowing participants to interact with several different experiences, with several researchers.
